[tweetmeme] From The Classic Zucchini Cookbook: 225 Recipes for All Kinds of Squash I decided to try out

Tomato Zucchini Soup

3 tablespoons extra virgin olive oil
1 onion, minced
1 Small fennel bulb or 2 celery ribs, minced
1 carrot, minced
2 cloves of garlic, minced
1 ounce ham, minced (optional)
4 cups chicken broth or vegetable brother
2 cups diced and seeded tomatoes
2 cups grated zucchini
Salt and freshly ground black pepper

1. Heat the oil in a soup pot over medium heat.  Add the onion, fennel, carrot, garlic, and ham.  (if using)  Saute until the vegetables are soft and fragrant, about 5 minutes.

2. Add the broth and tomatoes.  Bring to a boil, then reduce the heat, and simmer for 30 minutes

3. Add the zucchini and salt and pepper to taste.  Simmer until the zucchini is cooked through, about 15 minutes.

4. Serve hot.

Serves 4

I modified things a bit…

  • I used butter instead of olive oil
  • I opted to use 5 stalks of celery instead of the fennel or 2 celery ribs
  • I forgot to buy a carrot…
  • I used about 10 cloves of garlic
  • I didn’t use ham
  • I probably used about 6 cups of chicken broth and could probably use a bit more due to all the extra stuff I added – most of it absorbed the liquid….
  • I used a 24 oz. can of diced tomatoes
  • I used about 6 cups of zucchini
  • I added a 10 oz. container of sliced mushrooms
  • I also mixed in a pound of mini shell pasta

It came out really really yummy!
I highly recommend….

We went to Bettie’s Cake’s Double Decker Bus today for brunch.  The bus is a 1963 Bristol Double Decker Bus.  The 2nd floor is seating, though in this hot weather it was too hot to eat up there.  The set-up was really unique.  This weekend they are parked in at 250 Delaware Avenue in Delmar, NY.  They change the location quite often (they’re mobile for a reason!) so check out their Twitter and/or Facebook to find out where they are.  I bet the owner Lorraine Murphy can tell you too!

Sierra had a peanut butter cup cupcake, Michael had a coconut cream cupcake and I had a red velvet cupcake with cream cheese icing.  They were all really yummy!  I also got an M&M cookie.  I’m eating it right now, and almost 12 hours after I bought it, it’s still good!!

Hopefully we can visit them again soon.

Michael & I go up to Americade every summer and hang out with our friends who stay at The Clinton Inn in Lake George, NY.  Next door is Ray’s Helova Deli and their subs are AWESOME!!  If you’re up that way make sure you check them out!!

The other night I decided to go healthy and make a yummy dinner.  This time of year I tend to crave fresh veggies.

I didn’t get a picture of it, but I also sliced up some mozzarella cheese.

Later when I scooped out a bowl I also added some roasted red peppers and some basil.
I also added some salt, pepper, and garlic powder.

Many of you know that my FAVORITE meal of all time is duck.

6.75 lbs. of deliciousness....

Yesterday was my 4 year anniversary with Michael.

Together for 4 years!!

We started a tradition the year we met.  For Valentine’s Day, our anniversary, and my birthday he makes me a duck dinner.

We started doing this because the service in restaurants is usually pretty horrible on Valentine’s Day, and there aren’t too many restaurants I can go to and get good duck around here.

Notice there is water in the bottom of the pan.

I remember the first time Michael made us a duck.  I think it took 3 days to get all the smoke out of the house!  If you ever attempt to make a duck make sure you put water into the bottom of the pan.  Duck is a very fatty meat and the grease and fat smoke when it burns in the pan.  The water prevents this.

Flambe the plums!

Through the years Michael has made different sauces for with the duck.  Cherry, plum, blackberry….  He did the plum again because we both really liked it.  The tricky thing is that the plum recipe has him flambe the plums!  All I can picture is that Fresh Prince of Bel Air episode where Will says “I can flambe” and he sets the kitchen on fire!  (You can see it HERE)  Don’t worry, we have a fire extinguisher handy in our kitchen just-in-case….  Luckily we’ve never needed it.

The duck is out of the oven ~ Is that like the cat's out of the bag?

The duckling came out so so yummy!  The thing that’s the worst about a duck dinner is that you smell it cooking for a few hours, and it’s over so quickly.  Kind of like Thanksgiving dinner….

We didn’t care about making things fancy, the duck was getting cold and we just wanted to dig in!!!!

Bella had her own special dinner too!

Even Bella had a bowl with duck and mashed potatoes.  Potatoes stuck to the roof of a doggies mouth is right up there with peanut butter!!  She loved it!

All in all it was a very very yummy dinner.
A big thank you to my Michael for taking the time to make me my favorite dinner of all time!!
